Galentine’s Day Pumpkin Waffles
Recipe
Ingredients:
- ¼ C brown sugar
- 1 ½ C gluten free flour blend
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 3 tsp cinnamon
- 2 egg yolks
- 2 egg whites, beaten to stiff peaks
- 1 C unsweetened almond milk
- 1 can pumpkin
- 4 Tbsp. melted coconut oil
Directions:
- Preheat waffle maker and spray with non-stick cooking spray.
- Mix all the dry ingredients together in a bowl.
- Mix all the wet ingredients together, except the egg whites.
- Beat the egg whites until stiff peaks form.
- Fold the egg whites into the other ingredients.
- Pour batter into waffle maker and bake until golden brown.
