Galentine’s Day Pumpkin Waffles

Recipe

Ingredients:

  • ¼ C brown sugar
  • 1 ½ C gluten free flour blend
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 tsp cinnamon
  • 2 egg yolks
  • 2 egg whites, beaten to stiff peaks
  • 1 C unsweetened almond milk
  • 1 can pumpkin
  • 4 Tbsp. melted coconut oil

Directions:

  1. Preheat waffle maker and spray with non-stick cooking spray.
  2. Mix all the dry ingredients together in a bowl.
  3. Mix all the wet ingredients together, except the egg whites.
  4. Beat the egg whites until stiff peaks form.
  5. Fold the egg whites into the other ingredients.
  6. Pour batter into waffle maker and bake until golden brown.
